quality wine containing Cabernet
Sauvignon, rich Tannat, & dark
Petite Sirah. This is big all
around: aggressive labeling, plenty
of production so it is easy to find
and a powerful style of wine,
including both Tannat and Petite
Sirah. Aromas of crushed blackberry
and tar start the sip, while the
palate picks up black cherry and
dried herbs, all riding a
glycerin-like texture.
- 2021 Stafford Hill Holloran
Tempranillo Eolia Amity, Oregon $18
The nose offers notes of persimmon,
clove, violet and blueberry.
The palate shows round, ripe black
cherry flavors, leading to a
moderately long finish with ripe
tannins. Paired nicely with
Juniper-brined double cut Pork
Chops. Drink 2023-2035 decant in
early years. The 2021 Stafford Hill
represents our second wine, based on
barrel selections from the various
clones of Tempranillo that we farm
in the Eola Hills. The soil is
mostly volcanic and influenced by
the winds of the Van Duzer corridor.
This wind exposure helps the vines
retain a bright fresh acid profile
in the fruit. We farmed utilizing
sustainable, organic, and biodynamic
practices. This wine offers
tremendous value and quality
winemaking as our Holloran
Tempranillos.

Las Liebres Cabernet Franc Argentina
$12 Made with Organic Grapes! Alto
Las Hormigas, a winery founded in
Mendoza by the Italians Alberto
Antonini, Antonio Morescalchi and
Attilio Pagli, currently has organic
vineyards in Luján de Cuyo and Valle
de Uco whose grapes are vinified by
the young winemaker Federico
Gambetta. For Colonia Las Liebres
Cabernet Franc, it uses fruits from
the Luján de Cuyo estate that
ferments in cement vessels with
native yeasts, thus achieving a
bright violet-colored red wine with
deep fruity aromas to which added
soft herbal and menthol nuances. The
palate is light, linear, and fresh
with fleshy tannins and a long
finish. A friendly and tasty organic
red. Wow, I love this wine!

- 2020 Pajot Les Cepages, Gascone,
France $12 Les 4 Cépages is a dry
white Côtes de Gascogne made from the
four main regional varieties mentioned
above: Colombard, Ugni-Blanc,
Sauvignon, and Gros-Manseng. All four
grapes are complementary and balance
each other well, resulting in a dry,
zippy, incredibly refreshing white
that is a go-to value every vintage.

Tourelles Blanc presents a harmonious

Subtle undertones of fresh herbs and a
hint of wet stone reveal the terroir's
unique character. Upon first taste,
the wine delivers a lively and
refreshing acidity that balances the

hummus, baba ganoush, tabbouleh, and
stuffed grape leaves, harmonize with

plate of kibbeh, a mixture of bulgur

des Tourelles Blanc pairs well with
